dream dinners
I got $20 off coupons for dream dinners in Chattanooga. if anyone is interested, please leave a comment on this post and we will figure out how to get it to you. dream dinners is like family dinners, but they have a larger menu and each meal has different price. I have never been to either.

Pilau
Many people have asked me for this recipe but I have not been able to do so because I did not have it written down. We just know how much of something to use by just looking :) I did it in a recipe form that is I hope easy to use. feel free to ask if you have any questions.
Pilau is the same as Rice Pilaf, it is a rice dish. It varies depending on who is cooking it. It was brought to Kenya by the Arabs and mostly eaten by the coastal people. it is mostly served at Kenyan weddings, and it can be served with beef/chicken stew or you can incorporate the beef/chicken into the recipe and it will be a main dish served with Kachumbari (Kenyan coleslaw).
My recipe is just for the rice dish (minus the meat)
What you need:
3 cups of rice preferably basmati or jasmin rice
6 cups of water (or less depending on the cooking instructions on your rice)
1/4 tsp cummin
1/4 tsp cloves (not garlic cloves) - you can go easy on the cloves if you find it too strong
1/2 tsp cardamon
1/4 tsp black pepper
1/4 tsp cinammon
2 garlic cloves - minced
fresh ginger (optional - but it would be good)
1 large onion (finely chopped )
tomate paste/sauce/or two chopped tomatoes
Salt to taste
Oil for frying - any kind
Mix cummin, cloves, caradamon, black pepper and cinammon together and set aside
On medium heat, Saute the onion in the oil until soft
Add garlic and ginger and continue frying and stirring
Add rice and stir until the rice is very well mixed with the oil
Add the spices you had set aside and mix well with the rice.
Add the water and stir
Add the tomatoes
Cover and simmer and let it cook. Check on it occasionally and when all the water is done, it is cooked. You can also check if the rice is cooked and it not, add some hot water.
Variation 1
if you decide to add meat, you can brown the beef/chicken before you add the rice. remove the meat from the pot, and then add it back when you add the water.
Variation 2
if you love coconut, you can add grated coconut after you add the water. yum!!
Enjoy! serve with your favorite beef stew or chicken curry
